Almond milk… you’ll never have to buy that expensive, sugar and chemical-loaded almond milk again! This is so easy!
1 c raw almond
4 c water
¼ c agave syrup
Pinch of sea salt
Up to a tsp of vanilla extract (start with less to your taste)
1. Put the almonds and the water in your blender and process till almonds are fine and the water is white.
2. Pour the whole thing into a cheese cloth or a nut bag and drain over a big bowl. You can help it along by squeezing the cloth.
3. Add the rest of the ingredients to your almond milk and enjoy like regular milk.
Now… what to do with the left over almond pulp…
Almond Milk CHEEZE!
1. Put the pulp into a food processor
2. Add: 2 or 3 garlic cloves
3. 2 tbs olive oil
4. A couple of pinches of salt
5. A handful of pine nuts (make sure they are NOT from China!) (You don’t have to have these, they just add to the cheese flavor)
6. Any spice you’d like… peppers, onion, Italian seasoning, dill, horseradish etc.
You can also add some nutritional yeast (you can get it on Amazon.com). This also adds to the cheese flavor and is very good for you. This is a little softer than cheese and it really isn’t the same, but it is good.
My littlest boy and I just got done making both of these.. SO delicious!! I really like vanilla flavor so i put the whole amount in.. i think i'll do slightly less next time. For the cheese we used the dill variation. It came out great! We also didn't use pine nuts cuz i don't have any. My little guy who is super picky kept asking for more lol that's a testament to just how good it is!! It kinda reminds me of a salad cheese, like parmesan or ramono..not in taste so much, but in consistency. I'll be adding it to my salads :) Thanx for the great recipe!!
.. i forgot to add that since i don't have either a cheese cloth or nut bag i simply used a (super) cleaned pair of stockings cut and tied into bag shape.. it sounds gross i know, but hey it worked and it was cheap!
